The JourneyNo. 01

The Maldives feeds people who have eaten everywhere — quietly, and without a queue. Visiting chefs, tables where no table should be, cellars that run deep into Bordeaux you thought was unobtainable.
We plan these journeys around the kitchens, not the villas: which island holds the omakase worth the seaplane, which chef is in residence which week, and which dinner must be composed once and never served again.
- Sandbank tables for two — set, served, and erased by the tide
- Reef-to-plate omakase where the lagoon provides the lighting
- Cellar dinners and visiting-chef residencies, timed to your week
- The dishes that are not on any menu — asked for by name
